If you’ve got a sweet tooth and are after a snack but don’t want the guilt associated with the shop-bought kind, then why not give these delicious flapjacks a try? They’re made with some great ingredients, including lovely sun-dried bananas, chia seeds and jumbo oats, but they leave out the nasty additives and preservatives.

A little sea salt also goes a long way with these treats, adding a pop of flavour in each bite that will keep you reaching for more!

Banana and Chia Seed Flapjacks

Serves: 6
Prep time: 10 minutes
Cook time: 35-40 minutes

What you will need:

2 tbsp chia seeds
2 tbsp golden syrup
80g unsalted butter
60g light brown muscovado sugar
160g jumbo rolled oats
2/3 cup sun dried banana chips, roughly chopped + a few whole chips
½ tsp sea salt flakes

What you need to do:

1. Preheat the oven to 180oC

2. Place a saucepan on low heat and melt the butter, sugar and golden syrup.

3. Stir the chia seeds into the warm syrup mixture and leave for five minutes for the seeds to plump up.

4. Pour in the jumbo oats and sea salt and stir until all the oats are coated well in the syrup mixture.

5. Grease and line a 20cm baking tin and pack in the oat mixture, flattening the top evenly. Top with a few whole banana chips.

6. Bake in the oven for 35-40 minutes, until the top turns golden brown. Leave to cool in the tin before turning out and serving.

7. Store in an airtight container.
