Fatih Tutak opens Turk-Asian restaurant Gallada and cocktail bar Topside at The Peninsula Istanbul

Chef Fatih Tutak has launched Gallada and Topside Bar, a fresh Turk-Asian dining destination in Istanbul. Drawing inspiration from the Silk Road’s historic Eurasian trade routes, this new restaurant-cum-bar graces the rooftop of The Peninsula Istanbul, offering views of the Old City and the vibrant Galataport waterfront.

Influence by Tutak’s roots and extensive Asian travels, Gallada’s menu celebrates the country’s gastronomic heritage, focusing on sustainable sourcing and hyper-seasonal ingredients. The sharing concept includes dishes such as Adana Kebab Dumpling, Wood Fired Monkfish with Black Paste and Yoghurt and Warm Medjool Date Cake with Masala Tea and Whipped Buffalo Cream.

Adjacent to the restaurant, Topside Bar takes inspiration from the Silk Road and the maritime history of the Bosphorus Strait, with a cocktail menu combining local ingredients and international flavours. The drinks list comprises Istanbul (Douzico, Otto’s vermouth, fig and rose jam, lime) and House of Wisdom (Mirra washed Rum, Antica Formula, Campari, Chocolate and Falernum). 

The design marries traditional Turkish aesthetics with modern sensibilities and includes private dining facilities and a palatial alfresco terrace adorned with pomegranate trees. Topside Bar, modelled on a grand vintage yacht, adds a touch of luxury and promises a lively music programme, ranging from soothing Eastern sounds to ethnic house beats in the evening.

Chef Tutak, who also runs two-Michelin-starred restaurant Turk, said: “I have been fascinated with the ancient paths of the Eurasian Silk Road, with all its tales, traditions and gastronomic heritage. This is an incredible opportunity to work on menus with no precedent here in Istanbul, showcasing the treasures and incredible recipes that have connected us throughout history with Asia and beyond.”

With a keen focus on community and social interaction, Gallada and Topside Bar aim to enhance the ever-evolving food scene of Istanbul with a seamless mix of tradition and modernity. The experience is poised to engage both local and international guests by echoing the deep cultural connections of a city celebrated as a crossroads of civilisation.
