French cuisine meets electronic beats: {Paired} returns to Tate Modern this August bank holiday

Tate Modern will host a two-night event this coming Bank Holiday to bring together French gastronomic and musical talents for an immersive adventure on 22rd and 23rd August. Organised by culinary institution Carousel and electronic music platform AVA Festival, it is the latest edition of {Paired}, a collaborative series that explores the intersection of food and sound. This edition features chef Alexis Bijaoui and DJ, composer and producer Laurent Garnier, who will co-create a multi-sensory evening combining contemporary French cuisine with electronic music.

Taking place in The Corner Bar at Tate Modern, the experience will run from 7pm to 2am each evening. Attendees will start with a multi-course tasting menu designed by Bijaoui, followed by a DJ set from Garnier. According to organisers, the menu and music are developed in tandem to complement one another, creating what they describe as “a feast for the senses”.

Bijaoui, who has worked in French restaurants including Le Chateaubriand and L’Arpège, is known for his vegetable-led cuisine rooted in nature and craftsmanship. Dishes on the menu include Oysters with Salted Almonds and Toasted Olive Pit Oil, Heirloom Tomatoes with Fermented Tomatillo and Beurre Blanc Sauce and an Aged Pork Rack served with ivory sauce and caramelised citrus. Dessert features Aubergine and Hazelnut Ice Cream, which is topped with aubergine skin praline and roasted koji ganache.

Garnier, a pioneer in the global electronic music scene since the late 1980s, will provide a curated soundtrack for the evening. With tracks such as Crispy Bacon and The Man with the Red Face, the DJ has been recognised for his contributions to French culture, including being named a Chevalier de la Légion d’Honneur in 2017.

“Music creates an invisible thread between ingredients,” said Bijaoui. “It sets the tone, evokes emotion and transforms each meal into an immersive, almost cinematic experience.”
