Innovative Indian restaurant Haōma in Bangkok is set to embark on a limited-time residency at Manresa, California this August, bringing together chef Deepanker Khosla with the Los Gatos venue as part of the Ritual at Manresa series. The event marks a rare international appearance for Haōma, which has garnered both a Michelin Star and a Michelin Green Star for its commitment to sustainability and culinary excellence.

Khosla was named Champion of Change by the World’s 50 Best Restaurants, and his restaurant is described as the first Neo-Indian, zero-waste, urban farm restaurant in the world. In addition to its Michelin accolades, Haōma was named Asia’s Most Sustainable Restaurant in 2024 by 50 Best and was awarded World’s Best Wine List and Most Sustainable Wine List at the Star Wine List Grand Prix 2024. The Bangkok location operates on a closed-loop system, producing nearly all of its own vegetables, herbs and proteins while sending no waste to landfill. During the pandemic, they also provided over 300,000 meals to those in need and offered employment to hundreds of displaced workers. “This is cuisine with conscience, flavour with intent,” the restaurant states in its materials.

Ritual at Manresa invites international chefs to present their culinary philosophies at the acclaimed venue. Haōma’s upcoming residency will showcase their distinctive style of Indian cuisine, which combines traditional recipes with Thai-grown ingredients and ancient cooking techniques. The menu, designed for both omnivores and vegetarians, is described as offering a “sensorial journey across India”, highlighting its sustainability-driven ethos to reflect “a better, bolder future for fine dining”.
