Origin Coffee and Layers launch zero-waste vegan pastries in London cafés

Origin Coffee and East London bakery Layers are launching a limited-edition, zero-waste pastry range across Origin’s cafés in the capital this week. The collaboration, now in its second iteration, aims to reduce food waste by using surplus ingredients in plant-based bakes. It marks further progress in Origin Coffee’s ongoing efforts to reduce its environmental impact, while also offering customers a new way to engage with sustainable food practices.

Origin Coffee, founded in 2004 and headquartered in Cornwall, operates eight cafés across the UK in cities including London, Bristol, Edinburgh and its original site in Porthleven. The company has received multiple accolades, including being named Best Speciality Coffee Roasters in Europe in 2024 for the second consecutive year.

Their new pastry menu will feature five vegan pastries that incorporate repurposed food elements. Among the offerings are a Pistachio Frangipane & Rose Croissant made from surplus croissants, and a Kimchi Cube filled with kimchi created from vegetable trimmings. Other items include a Raspberry & Lemon Balm Lattice, an Earl Grey & Orange Curd Danish and an Apple Croissant Cookie. Each pastry has been developed by Layers, a wholesale bakery and café known for its plant-based approach. The recipes are designed to make use of ingredients that would otherwise be discarded, such as croissant dough trimmings and used tea leaves from iced tea production. They’ll be available exclusively at Origin’s three London locations: Southwark, Shoreditch, and the British Library.

“This collaboration reflects Origin’s broader Net Zero 2030 strategy, which includes reducing emissions across its operations, pursuing circularity in its practices and championing transparency throughout the supply chain,” the café states. “Just as Origin highlights the stories of its coffee producers, the new baked range carries a clear sourcing narrative, reinforcing accountability at every stage.”

The new Layers range will be available at Origin Coffee from 11th September 2025 at the café’s London branches in Southwark, Shoreditch and the British Library.
