Barcelona’s Foco brings signature cocktails to London’s Parasol for one-night takeover during London Cocktail Week

Barcelona-based cocktail bar Foco will take over Stoke Newington’s Parasol for one night only on Friday 17^th October, as part of London Cocktail Week. Running from 5pm to 2am, the evening will see the Spanish team present a specially curated menu in collaboration with Grey Goose vodka. Foco, which opened in 2023, has quickly gained attention on Barcelona’s bar scene for its modern reinterpretations of classic drinks, and they will bring a selection of their signature serves to the Dalston bar. Parasol, founded by Andy Kerr and Tom Gibson, stands out for its subterranean setting and experimental offerings. The evening will also include a DJ set by Olugbenga (who works with the band Metronomy), incorporating disco and groove selections to accompany the cocktails.

The one-off menu will feature a Grey Goose vodka-based selection, including several original creations. Highlights include a reimagined Moscow Mule (with vodka, cold-pressed ginger, kaffir lime leaf, black pepper and oat), which will also be available in a 200ml ready-to-drink format through Umbrella Workshop. Other featured serves include the Strawberry Fields (vodka with strawberry pastis, rhubarb mascarpone and rosé vermouth) and Foco’s version of the Espresso Martini, which introduces aerated espresso, salted vanilla foam and toasted hazelnut. In addition to vodka-based options, the menu will offer variations on classic cocktails, such as a Paloma made with Patrón Tequila Reposado, sparkling grapefruit wine and smoky chilli, and a Pisco Sour using Bombay Sapphire Premier Cru and beeswax pisco.

The event showcases a collaboration between two establishments known for their innovative approaches to mixology. It is part of a broader programme taking place across the capital during London Cocktail Week, which celebrates the city’s hospitality and drinks culture.
