Chet’s, the Thai-American restaurant located within The Hoxton hotel in Shepherd’s Bush, London, will open a new venue this October. Chet’s Bar will offer a selection of Thai-inspired cocktails and a bar menu developed by head chef Carolyn Or. The new addition aims to provide a relaxed evening setting for hotel guests, local residents and visitors.

There will be a range of signature drinks, including a Lychee Martini made with Reyka vodka, manzanilla sherry, lychee, Chet’s Super Sour and wakamomo, and according to the restaurant, more will be added to the menu in the coming months. The concept is designed to complement the existing restaurant, providing a more casual space for drinks and snacks before or after dinner.

Chef Or, whose culinary style draws from Los Angeles street food, has curated a bar menu to accompany the liquid offering. Dishes include Tuna Tacos with Chipotle Sriracha Mayo and Caviar and Pulled Pork Sliders with a BBQ Spice Rub, Tajin Aioli and Pckled Pineapple. For those seeking a more substantial option, the menu features Chet’s Smash Burger, made with a beef patty, American cheese, Chet’s house sauce, chillies and pickles, served with fries.

The new space is positioned as an evening destination within The Hoxton, with music and lighting intended to evoke the atmosphere of LA nightlife. “As the lights go down, the music goes up and Chet’s Bar will welcome guests, revellers and diners into the bar for leisurely evenings reminiscent of long LA nights well spent”, the restaurant said.

Chet’s first opened in 2022 as part of The Hoxton’s expansion into Shepherd’s Bush, serving a fusion of Thai flavours with American diner-style dishes. Their new opening coincides with the launch of a fresh dinner menu in the main restaurant, allowing patrons the option to begin their evening in the bar before moving into the dining area.
