Michelin-starred chef Tommy Banks has collaborated with sustainable food brand Bold Bean Co to launch a limited-edition Cowboy Pie, just in time for Bonfire Night. The hearty treat, which is available to buy via Banks’s premium food delivery service, Made in Oldstead, aims to highlight the culinary and environmental value of the British-grown Carlin pea.

The Cowboy Pie is inspired by the traditional Northern dish of Parched Peas, commonly eaten during Bonfire Night. The updated version features a filling made from braised Carlin peas in a smoky tomato sauce with gentle spices, encased in an all-butter pastry crust. Each order includes four individual pies, a jar of Bold Bean Co’s Carlin Peas and a recipe card for making Carlin Peas Saag at home.

The Carlin pea, sometimes referred to as a “black pea”, is a heritage pulse grown in the North of England. Often overlooked in modern British cuisine, it is gaining renewed attention for its nutty flavour, nutritional content and positive impact on soil health, particularly in regenerative farming systems. By incorporating the ingredient into a seasonal dish, Banks and Bold Bean Co aim to highlight its versatility and cultural significance.

Bold Bean Co, who specialise in high-quality jarred legumes, have made it part of their mission to reintroduce traditional beans and pulses to British kitchens. Their collaboration with Made in Oldstead reflects a growing trend in the UK food sector to promote sustainable, locally sourced ingredients. The team behind the pie said the dish is “an ode to the small and mighty British pulse”, drawing directly from Bonfire Night traditions to offer a contemporary take on a regional classic.
