Master pâtissier Nicolas Rouzaud has introduced a limited-edition pecan tart for the month of November, available exclusively at his eponymous patisserie located at The Connaught in Mayfair. The dessert has been created in honour of the American Thanksgiving holiday, which falls on 23rd November this year, and will be sold throughout the month.

The seasonal treat comprises multiple layers including pecan paste, pecan custard, and pecan caramel, topped with a pecan and Dulcey chocolate mousse. It is finished with a caramel glaze, roasted (you guessed it!) pecans and a Dulcey chocolate decoration. Rouzaud, who trained in France and takes pride in technical precision and French pastry techniques, has designed the tart to evoke the flavours of autumn while incorporating elements of American tradition. Available in three sizes, it can be purchased to take away or enjoyed at the venue. Individual portions are priced at £14 for takeaway and £16 for dine-in, with larger sizes, designed for sharing, priced at £50 (serves four) and £70 (serves six).

Rouzaud opened his namesake establishment at The Connaught in 2023, and has since built a reputation for high-end holiday offerings. The Thanksgiving tart follows a series of limited-run desserts tied to cultural and calendar events, including Easter and Valentine’s Day. It also speaks to Rouzaud’s continued efforts to blend classic French patisserie with seasonal and international influences. “This creation is a refined ode to the Thanksgiving season,” say the team, who describe it as “a rich, nutty creation that celebrates the comforting flavours of autumn, reimagined through Rouzaud’s signature French artistry and precision.”
