Shedletsky’s in Leyton launches nationwide pickling and fermentation subscription just in time for holiday season

Leyton-based deli food producers Shedletsky’s have launched a new subscription service aimed at home cooks across the UK. The Brine Flight was introduced this month and offers a quarterly delivery box designed to teach customers the basics of pickling and fermenting. The service is available nationwide through the company’s website and is intended to make traditional preservation techniques more accessible to the general public.

The Brine Flight is the brainchild of Shedletsky’s founders James Cooper and Natalie Preston, a husband-and-wife team who began the business in 2019. Each box includes a selection of prepared jars, spice blends, brines and a seasonal pickling project. According to the company, the aim is to provide a “hands-on introduction” to the process of making them, bringing in classics such as Red Kimchi, Bread & Butter Pickles, Herby Giardiniera and a seasoning blend known as Everything Seasoning. The offering represents a shift from simply selling finished good to encouraging customers to engage directly with their production.

Shedletskys, which operates from a dedicated facility in Leyton, East London, has developed a reputation for its range of pickles and hot sauces. Since its inception, the business has received 11 Great Taste Awards, including a national accolade for Best Hot Sauce. Its creations are stocked by a number of independent retailers, including Panzer’s Deli, De Beauvoir Deli, Superette and Delli Market.

While the launch is a new direction for the business, the founders see it as a natural extension of their work. “We wanted to give people a chance to get involved in the making side of things,” they explained. “Fermentation and pickling can seem intimidating, but with the right tools and guidance, it’s very approachable.”
