Greek island-inspired restaurant Rho launches chef residency at The Pilgrm Hotel in Paddington
A new chef residency has launched at independent boutique hotel The Pilgrm, in Paddington, as part of the venue’s ongoing guest chef series. Headed up by chef Marios Miliorellis, new concept Rho draws on the culinary traditions of the Greek Cyclades islands, and is showcased at the hotel on Wednesday to Saturday from 6 to 9.30pm.
The five-month residency forms the latest chapter in The Pilgrm’s programme of rotating culinary partnerships, which invites guest chefs to present original menus in the hotel’s dining space. The venue has established itself as a champion for independent culinary talent through its guest chef model, which offers a platform to present original work without the overhead of a permanent restaurant.
Miliorellis describes Rho as a deeply personal project, rooted in his Greek heritage and early food memories. His food takes its inspiration from the rustic cooking of island tavernas across the Cyclades, presenting those influences through more refined, composed dishes. The residency arrives amid a broader wave of Greek restaurant openings across London, reflecting a growing appetite for contemporary Hellenic cuisine.
The menu features a selection that blends traditional Greek ingredients and techniques with modern presentation. Among the highlights are Lamb Mastelo – slow-roasted spring lamb chops served with smoked mackerel mash, crispy vine leaf and lamb jus – and Tonos Lountza, a tuna tartare prepared with wine must and violet jus. Others include Metsovone Cheese Croquettes and Kotopoulo Kontosouvli (marinated chicken skewers with Greek herbs and spicy feta).
Among the desserts in a standout creation called Aphrodite: a Greek yoghurt ice cream sculpted in the shape of the goddess of love, served with spicy cherry and honey caramel. It’s a dish that beautifully encapsulates the mythological and cultural threads that run through the wider concept.
