The chefs behind the Big Mamma restaurant group are publishing a new cookbook dedicated entirely to pasta, releasing in the UK in October. The book compiles 150 recipes drawn from the chefs’ family archives, with the launch timed to coincide with the annual World Pasta Day, which falls on 25th October. The timing is intended to appeal to cooks inspired by the festival, which was established by pasta producers in 1995 to promote the food globally. 

The collection brings together a range of recipes for both home cooks and enthusiasts of Italian cuisine. According to the publisher, the dishes include reinterpretations of well-known classics, alongside lesser-known regional dishes and newer creations developed by the Big Mamma team. There’s a dedicated instructional section guiding readers through the techniques required to produce various pasta shapes by hand, from familiar formats to more obscure shapes and less familiar specialities. Readers are taken through the processes needed to recreate them, with context provided throughout for each dish.

The Big Mamma Italian restaurant group has built a reputation for serving authentic Italian food across multiple European cities, with venues in Paris, London, Madrid and more. The company is known for sourcing ingredients directly from Italian producers and for its focus on traditional cooking methods. This release represents the latest in a series of publications from the team, extending their cuisine beyond their restaurant locations and into the home kitchen.
