London cocktail bar Tayēr + Elementary has started a six-week residency called Casual by Tayēr in the basement bar at Cato in Covent Garden from 15th July to 26th August 2026, following the temporary closure of its original premises after a fire. The residency is the first instalment of a new concept series, titled What If?, from co-founders Monica Berg and Alex Kratena, and will run from Wednesday to Saturday, 6pm until 1am.

The series is intended to explore and reinterpret different themes through the Tayēr brand. Rather than replicating Tayēr + Elementary, Casual by Tayēr places the bar’s approach in a more relaxed setting, combining the atmosphere of a neighbourhood bar with the cocktail style associated with the venue. The residency follows the unexpected closure of the founders’ original site due to a fire.

The drinks menu pairs cocktails in the Tayēr style with the technique associated with Elementary, and includes established favourites such as the One Sip Martini. Head chef Steven Diaz has created an accompanying food menu of snacks, skewers, sandwiches and hot plates drawing on Latin and Asian influences. Dishes include green plantain crisps with rayu, watermelon and shiso gilda, yellowtail tiradito, tamago sando and a Cubano sandwich.

Tayēr + Elementary is a double-concept cocktail bar established in London in 2019 by Berg and Kratena. It has placed 12th in the Europe’s 50 Best Bars 2026 list and 5th in The World’s 50 Best Bars 2025. Cato, located on Mercer Street, is named after the 19th-century Manhattan bartender Cato Alexander and is operated by hospitality group Bart & Taylor in partnership with Bafas.
