The chef Tommy Banks has created a limited-edition six-course menu to mark the 20th anniversary of his Michelin-starred restaurant, The Black Swan at Oldstead (near York), working alongside executive chef Callum Leslie and head chef Alice Power. Produced in collaboration with the chef’s home delivery service Made in Oldstead, it will be available to order online for delivery on 20th, 21st, 27th and 28th August, priced at £119 for two.

Titled the 20th Anniversary Celebration, the menu draws on dishes from The Black Swan’s tasting menu and aims to make their food available to diners further afield. Its release, which also falls on Yorkshire Day, coincides with a broader set of anniversary events, marking two decades since the Banks family took over the village pub and developed it into a restaurant with rooms.

The team’s focus on local ingredients is reflected in the selection, which includes wild garlic, lovage, elderflower and Crapaudine beetroot – all featured in tasting menus over the past 20 years – as well as lamb and beef reared on the family farm. In the snacks range there’s a Duck Liver and Blackcurrant Croustade, a Goat’s Cheese, Wild Garlic and Pickled Walnut Brioche and a Tomato Steak with Lovage and Fennel Pollen. Main courses come in the form of Braised Beef Cheek with Laminated Ale and Onion Brioche and Loin of Yorkshire Lamb with Kohlrabi and Hispi. For dessert there’s Elderflower Parfait and Sheep’s Yoghurt with Caramelised White Chocolate and Honeycomb, followed by a savoury-sweet Crapaudine beetroot dish finished with beetroot sherbet.

The anniversary programme will also stage events throughout August. A wine pairing headlined by the Pol Roger Vinothèque 2006 vintage (marking the year the family took over the restaurant) will run alongside the tasting menu from the first of the month. The champagne is released in the UK on the same date and will be available at The Black Swan by the glass, by the bottle or as part of the pairing. According to the team, only 90 bottles exist, with 30 them held in the restaurant’s cellar.

A 20-ingredient Negroni will also be introduced, developed over 18 months and available for a limited period. The Sbagliato-style drink uses herbs and fruits from The Black Swan’s kitchen garden alongside foraged ingredients. It combines Oldstead Bitter Herb Liqueur (described as a Yorkshire version of Campari and brewed with woodruff, wormwood, tagette marigold and bay leaf) with sweet vermouth and hogweed tincture, topped with Charles Palmer Classic Cuvée.

Banks, who also owns the Michelin-starred restaurant Roots in York and the pub The Abbey Inn at Byland, launched Made in Oldstead in 2020 after his eateries closed during the pandemic. He describes The Black Swan as a “co-operative of minds”, adding that his team has “tremendous talent” and that it is “their coming together that creates something special”. The collaboration between two of his brands sounds equally intriguing.
