Mountain’s Andrianos Poulis to bring Greek and Cypriot flavours to The Palomar for one-night residency
The Palomar, the Soho restaurant founded by siblings Zoë and Layo Paskin, will host Andrianos Poulis, senior sous chef at the Michelin-starred Mountain, also in Soho, for a one-night guest chef residency on Monday 7th September. It’s the latest edition in a pop-up series designed to give a platform to emerging chefs working in London.
Poulis is the fourth chef to take part, following Alexandra Dudley, Jacob White and Millie Lagares. His dishes will be served as a list of specials alongside The Palomar’s existing à la carte menu, which is overseen by head chef Dan Murray. Originally from Athens, he grew up around produce from across the Aegean, an influence he cites as the basis of his produce-led approach. After moving to London Poulis worked at Ottolenghi’s Rovi and at Cornerstone before joining Mountain. His cooking draws on Greek and Cypriot traditions, with family recipes reworked through travel, seasonality and technique.
The smaller plates on the night will include Marathopita with Talatouri (a pan-fried herb pie served with Cypriot dried-mint tzatziki) and Koupepia (vine leaves stuffed with pork, rice and mint and slow-cooked in tomato sauce). Larger dishes comprise Red Mullet Savoro with Elderberries – the fish fried and served in a sweet-and-sour rosemary and vinegar sauce – and Cretan Lamb Pilaf. Dessert is a custard-filled Cherry Blossom Bougatsa pastry.
The guest chef series is a recent departure for The Palomar, who have not previously invited outside chefs to cook in their kitchen in the decade or so since opening in the heart of Theatreland in 2014. The dining room is built around an open kitchen bar that runs the length of the restaurant, serving food influenced by the cultures of Southern Spain, North Africa and the Levant. The team has held a Michelin Bib Gourmand for the past 12 years. They source organic free-range meat as well as seafood from Cornish day boats, and they bake all bread on site. Mountain, where Poulis currently works, is among Soho’s more prominent recent openings and holds one Michelin star.
