The Jack O’Newbury, a pub and restaurant with rooms owned by chef Dom Chapman and restaurateur Nigel Sutcliffe, will open in the Berkshire village of Binfield on Wednesday, following more than two years of renovation work on the former village inn. The venue sits a short drive from Windsor and Ascot and just over 30 miles from London, and marks the first hospitality business the pair have opened together. 

Nicknamed The Jack, the property hgoccupies two acres of private grounds and has been fitted out by Bath-based design studio Alfred House. It includes an 80-cover dining room, a 20-seat terrace with an Argentinian grill and wood-burning oven, a bar area called The Snug with a wood-burning stove, and a purpose-built pavilion intended for weddings, private events and celebrations. 11 individually designed bedrooms are divided between the central pub building, converted stables and an adjacent restored Grade II listed barn, with rooms starting from £170 a night.

The outdoor dining terrace looks out over a wildflower meadow and herb garden, which will supply vegetables, herbs and edible flowers to the kitchen. The name is retained from the original inn and refers to John Winchcombe, the 16th-century Berkshire cloth merchant known as the Jack O’Newbury. That reference runs through the interiors, with each bedroom named after a different fabric and the design drawing on British textile craftsmanship through natural materials and muted tones.

Chapman’s menu is built around pub dishes with some European influences and a grill section using cuts from British farms. The opening à la carte list includes nibbles such as a Scotch Egg and Lamb Kofta, Tzatziki and Pickled Onions, and starters like Sweetcorn Soup, Salsa Verde, Crisp Frogs’ Legs and a Rabbit and Bacon Terrine. Main courses range from Haddock, Fish ‘n’ Chips, Mushy Peas, Tartare to Slow-Cooked Shoulder of Venison, Red Cabbage. There are larger sharing plates like a Roast Rib of Hereford Beef, Chips, Watercress at £85 and grill options covering a Whole Native Lobster, Garlic Butter, Fries, a Tamworth Pork Chop, a burger and more. Meanwhile, the drinks list features local ales, English wines and seasonal cocktails, some using surplus kitchen ingredients. The restaurant will serve breakfast, lunch and dinner seven days a week, with a Sunday roast each week.

Chapman and Sutcliffe met while working at Heston Blumenthal’s The Fat Duck Group. Chapman was the opening head chef at The Hind’s Head before running The Royal Oak at Paley Street, where the kitchen won a Michelin star in 2010, and later The Beehive in White Waltham and The Crown in Burchetts Green. Sutcliffe, who will oversee day-to-day operations, was previously a director at The Fat Duck Group and was part of the founding teams at The Crazy Bear in Stadhampton and The Oarsman in Marlow. Discussing this latest opening, he explained:

“Dom and I are excited to be bringing this beautiful property back to life. It’s a rare opportunity to restore this characterful village inn and create somewhere that truly feels special, which will focus on genuine hospitality. Our aim is simple: to offer wonderful food, warm service and a place people will want to return to time and time again.”
