Today, London restaurant group Thai Square has opened Bangkok Mama, a Thai sourdough pizza concept, at its Minories site in City of London. Served for dining in, collection and delivery through Deliveroo, the new offering applies Thai curry, stir-fry and street-food flavours to sourdough pizza.

The bases are made using Wildfarmed flour milled from British wheat that’s grown using regenerative farming methods. Variations include the Gang Panang, available with beef or prawns and topped with panang curry paste, coconut milk, peppers and kaffir lime leaves. Then there’s the Bangkok Piccante, which draws on pad kra pao and combines soy sauce, bird’s eye chillies, onions, pepper and crispy basil, with a choice of beef or tofu and the option of a fried egg. The Tom Yum Goong Crisis is topped with mozzarella, roasted chilli oil, tom yum herbs and coriander, while the Mamargherita is a more conventional combination of San Marzano tomatoes, mozzarella and basil, with fresh Thai chillies available as an addition. Other pizzas listed are the Smokey Satay Chicken and Green Curry Chicken.

For starters and sides there are more traditionally Thai options like Laab Spring Rolls, (pastry-encased tangy minced-meat salad) and fried dim sum, as well as Cheesy Golden Triangles filled with mashed potato, carrot and sweetcorn. Desserts comprise a mango chilli sorbet served with a chilli-salt crust and a fried tiramisu gelato. The drinks list features Thai-inspired cocktails and mocktails.

Haim Danous, managing director of the restaurant group, said: “At Thai Square, we have always believed in the vitality of Thai cuisine. While pizza is traditionally categorised as fast food, we wanted to challenge that perception with the launch of Bangkok Mama. Our pizzas are freshly prepared and feature a signature sourdough base – a deliberate choice to offer an alternative that has a gentler impact on blood sugar than standard pizza dough. By marrying the authentic, vibrant profiles of our Thai recipes with the artisanal quality of sourdough, we are elevating pizza from ‘fast food’ to ‘gourmet’ at a fraction of the price. The result is something truly transformative: the familiar comfort of Thai curry, now enjoyed on a crisp, sourdough crust. We are incredibly proud of this fusion, and quite simply, it tastes amazing.”

To mark the opening, Thai Square is including one free Chang beer or glass of house wine with every pizza ordered between 27th August and 2nd September.
