Peckham Cellars, the wine bar and restaurant on Queen’s Road, has added a Basque-influenced burger to its Saturday menu, launching this weekend. The Txuleta Burger reflects the heritage of Basque-born head chef Pablo Urain Alfonso, and will only be available for between ten and 15 servings at each sitting.

Priced at £15, including traditional hand-made crisps, the special burger is made from Spanish ex-dairy beef, with chuck, trim and fat minced in-house to produce the restaurant’s own blend. It is finished with a Piquillo pepper relish and a cream cheese made using Ossau Iraty (a sheep’s milk cheese from the Basque region), then served in a house-made brioche bun. 

Founded in 2019, Peckham Cellars is run by married couple Helen Hall and Luke West-Whylie. Hall now serves as creative director (as well as for sister venue Little Cellars), with West-Whylie leading front-of-house and the wine programme. The restaurant only uses meat from retired dairy cows as part of a resource-conscious approach. This means the animal has a reduced environmental footprint as it’s shared across both milk and meat production, and older livestock are given a secondary use rather than farmers rearing a separate beef herd. The practice has become more common among British restaurants, with ex-dairy and retired breeding cattle valued by chefs for the depth of flavour associated with older animals.

The kitchen menu changes every fortnight and draws on British produce sourced from suppliers including Natoora, Blackwell & Co and Cibo, which is prepared with European – largely Spanish – influences. Dishes have included a Lardo Tortilla served with green pepper mayonnaise, Cuore del Vesuvio Tomatoes with burrata, fig leaf oil and almonds, Pig’s Cheek with cabbage, pancetta and mustard sauce, and Tempura Sardine with yuzu kosho. Meals typically begin with house-made bread or focaccia and a selection of smaller plates. A set sharing menu of six plates is served on Wednesdays and Saturdays between midday and 3.30pm, priced at £25 per person for a minimum of two guests. 

The wine list focuses on European bottles, organic producers and independent, family-run estates, alongside allocation wines released in small quantities. The bar also offers a short cocktail list that includes the Gilda Martini, a savoury drink made with olive, anchovy and guindilla chilli. On Tuesdays, all wines by the glass are offered at £7.

The restaurant is closed on Sundays and Mondays, opening from 5.30pm to 11pm Tuesday to Friday and from 1pm to 11pm on Saturdays.
