Original recipe of the week: Easy Christmas pudding truffles

What better way to kick off the festive season than with some tasty Christmas pudding truffles. These can be knocked up simply in five minutes from either left-over Christmas pudding, or a fresh one for a more zingy flavour…chocoholics will love these tasty morsels.

Easy Christmas pudding truffles

Cook/preparation time: 5 minutes

Chill time: 2 hours

Serves 6-8

What you will need:

1 large Christmas pudding (fresh or left-over crumbs…however much you have).

100g dark chocolate (melted).

What you need to do:

  1. If using a fresh Christmas pudding (we like to use Sainsbury’s Cognac Laced Christmas Pudding for that extra bit of indulgence), cook via the heating instructions on the back of the packet.
  2. When cooked you can use the crumbs, but first place them to one side.
  3. Break up the chocolate and melt slowly over a bain-marie until complete.
  4. All you need to do now is break off small pieces of Christmas pudding, roll into balls and cover in the melted chocolate. The balls will need to be about the size of a walnut for the perfect truffle sized mouthful.
  5. Keep going until all of the Christmas pudding is gone. When finished, place the chocolate coated balls into a fridge and leave to set for approximately two hours, and you’re good to go.
