Original recipe of the week: Chia Seed, Flax Seed and Quinoa Chocolate Bars

This super healthy recipe contains just the right amount of super food ingredients to really give you a daily boost, without the energy slump that usually occurs when you eat just your average chocolate bar. The addition of coconut oil, almond butter and agar syrup are amazing substitutes for unwanted fats and sugars. The chia, flax and quinoa are the perfect substitute for flour, making this recipe not only dairy-free but also gluten-free – definitely not flavour-free!

Chia Seed, Flax Seed and Quinoa Chocolate Bars

Serves: 6
Prep time: 15 mins
Chill time: 2 hours

What you will need:

50g chia seeds
50g flax seed
50g flaked quinoa
1 tbsp agar syrup
1 tbsp coconut oil
2 tbsp almond butter
100g dairy free chocolate
1 tsp vanilla extract
1 tbsp vegetable oil
25g chopped dates
25g chopped apricots
25g dried banana chip
25g sunflower seeds

What you need to do:

  1. In a medium-sized frying pan add the oil, chia, flax and quinoa and fry. Once the chia seeds start to pop add in the coconut oil, almond butter, vanilla and agar. Reduce the heat and continue to stir for 5 mins.
  2. Now remove from heat and transfer into a large bowl; then you can break the chocolate into the mix and stir in. This should melt the chocolate.
  3. When it’s melted and combined add in the fruit and seeds. Give it a last mix and transfer into any mould you like. We prefer to use muffin cases but you could also spoon it into a lined tin and flatten.
  4. Chill for two hours in a fridge, remove when you wish to serve. Pop out the muffins for cutting into slices. Perfect for breakfast on the go or an afternoon treat.
