Bibi’s to open Mediterranean-inspired salad bar in historic Bolton House

Bibi’s will open a new location in the historic Bolton House on Cullum Street in the City of London on the 1st of May 2025. The opening of this seventh venue, also specialising in Mediterranean-inspired salads and healthy lunches, aims to serve the area’s busy professionals with a menu focused on fresh, homemade dishes and both grab-and-go and dine-in options. The new branch will also offer catering services to nearby offices and events.

The restaurant will be located at 16 Cullum Street, within Bolton House, a Grade II-listed Art Nouveau building completed in 1907. Designed by architect A.I. Selby, the building is noted for its Moorish influences, blue and white faience, and arched windows. Bibi’s has incorporated its own design elements, adding high chairs and stainless steel finishes that contribute to an energetic and stylish atmosphere.

Bibi’s was founded in 2018 by Turkish-born chef Bilur Yapici, known as Bibi, and her partner Tansel. The pair moved to the UK in 2016 and sought to bring fresh, healthy food options to London’s professional community, drawing inspiration from Turkish and global flavours.

The menu at the new Cullum Street restaurant will feature Bibi’s Signature Salad (£8.95), which combines six different Mediterranean salads with a variety of toppings and dressings. Options include spiced bulgur wheat with cucumber, turmeric with chickpeas and rocket, roasted carrots with thyme, cabbage with black cumin seeds, homemade hummus, and mixed leaves. Additional items such as grilled halloumi and falafel can be added, and the selection will change seasonally.

Hot food options will also be available, including Roasted Chicken with honey and Cajun spices, Roasted Salmon with honey and garlic, creamy coconut curry chicken, and Spicy Meatballs with tomato sauce. These dishes, priced between £10.95 and £12.70, are served with two salad sides. Diners can personalise their meals with toppings such as sunflower seeds, smoked chilli flakes, honey mustard, yoghurt and dill, or chilli oil.

The restaurant will operate on weekdays; catering services will include individual lunch boxes as well as buffet-style spreads.
