Chef Santiago Lastra will introduce a new dining experience at Kol, his Marylebone restaurant, on Wednesday 2nd July. The initiative, developed in collaboration with head of pastry at the venue, Laura Petersén, will see the opening of a dedicated dessert and drinks space within the existing mezcaleria. The new offering aims to reflect the traditions of Mexican dining culture – particularly in Oaxaca – by inviting guests to conclude their meal with desserts and drinks in a separate, specially designed area.

Lastra explained: “It is important for me to create a menu that tastes of home, to share a taste of my Mexico in London. After dinner, particularly in Oaxaca, everyone typically ends their evening in beautiful mezcal bars. With that in mind, we will now welcome our guests to join us for the finale of their meal and beyond in a little post-dinner Mexico.”

Mezcal will remain central to the drinks list, with the bar team highlighting the work of indigenous Mexican artisans. A custom trolley will be introduced, offering a selection of fine mezcals, cocktails, dessert wines, digestifs and infusions made with British botanicals.

Coinciding with the new guest experience Kol will update its menus to feature seasonal dishes inspired by both Mexican and British ingredients. New offerings include a tamal made with fermented acorn flour, birch water and bark, drawing on Lastra’s childhood memories and ingredients sourced from English forests. Other additions include the Strawberry Taco, which combines local seaweed, strawberry, elderflower and nasturtium leaf, and a reimagined Yucatán turkey stew, Chilmole, featuring semi-dehydrated pineapple tomatoes, fermented chillis, currants, ash oil and tortilla. The revised lunch menu will consist of five courses and be available Wednesday to Friday, priced at £95. The full 11-course tasting menu will continue to be served at dinner from Tuesday to Saturday, and at Saturday lunch, at a price of £185.

Since its opening in 2020, Kol has honed its approach to modern Mexican cuisine using British-grown ingredients. The restaurant’s new direction seeks to further explore the intersection of tradition and innovation.
