Phil Howard, chef-owner of the Michelin-starred Elystan Street restaurant in Chelsea, will be hosting a dedicated Truffle Week from 16th to 21st February, in honour of the close of the black truffle season. The timing makes the most of a period when the ingredient is considered to be at its peak – aromatic and delicious. Black truffles, primarily harvested in France and Italy, are prized for their unique earthy aroma and depth of flavour, and their limited season and high demand often make them an exclusive addition to fine dining menus.

The aim for the special week in February is to highlight the versatility and flavour of the underground treasure in a series of dishes designed to showcase the ingredient. Among them is a Double-baked Cave-Aged Cheddar Soufflé, with more to be announced in the coming days. A special part of the dining experience will come about via the restaurant’s approach to serving the truffles: diners will have the opportunity to buy a truffle and then choose which dishes they would like it shaved onto. This interactive element allows guests to personalise their experience and sample the truffle with various menu items.

Howard is a well-known figure in the British culinary scene, having previously held two Michelin stars at The Square before opening Elystan Street in 2016, in partnership with restauranteur Rebecca Mascarenhas. The establishment has since gained a reputation for its modern European cuisine and emphasis on seasonal ingredients, described by the Michelin Guide as offering “well-defined flavours and a lightness of touch, exuding a pared-back, unfussy style that suits the frequent Mediterranean influences”. The understated setting, always beautifully lit whether by day and night, is relatively relaxed but undeniably sophisticated – or as the Guide puts it, there’s “elegance and style in spades”.
