Original recipe of the week: Are you lactose intolerant…but love mashed potato?

Definition: To be lactose intolerant means the inability to digest lactose, a sugar found in milk and dairy products.

If you are affected by lactose then we are sure that in recent years you have become accustomed to the wide range of products that are becoming available on the market to suit your needs. Cheese, milk and also ranges of snacks and cooking products are now available lactose-free for ease and comfort.

We have developed a lactose-free cheesy mashed potato that is a delicious alternative to mashed potato full of milk. This is partly because many people are not massive fans of milk in mash and also because it is difficult to come across an easy to use recipe for the dairy-conscious mash lovers among us.

Lactose-free cheesy mash

Serves: 4 

Cooking time: 20 minutes

What you will need:

5 large white potatoes peeled and chopped

2 tbsp plain soy yoghurt (Alpro Soy is best)

1 tsp dairy free spread (Pure gives the most realistic texture)

100g dairy free cheese, grated (Lactose-free if possible, as I find this to be the ‘cheesiest’)

A pinch of sea salt flakes

A pinch of black pepper

What you need to do:

  1. Peel and chop the potatoes into smallish chunks. Wash and place in a large saucepan with just enough water to cover. Bring to the boil and simmer for 15 minutes or until soft.
  2. When soft, drain and place back into the saucepan.
  3. Add the salt, pepper and spread and begin to mash.
  4. When roughly mashed add the yoghurt and mash until smooth.
  5. Next, add the grated cheese and mix to combine.
  6. You now have a pan of cheesy dairy-free mash that nobody will ever know is dairy free. Try and keep it a secret when serving to family and friends and ask at the end what they think is the secret ingredient; trust us, nobody will guess!
