Rotterdam’s cutting-edge chef’s table Tres is launching a guest chef series called Tres Is More. This initiative aims to bring thrilling culinary projects to the city, starting on 26th September with Alejandro Serrano, the youngest Michelin-starred chef in Spain.

The restaurant

Tres is no ordinary dining space. Run by Michael van der Kroft, a contender for the Best Chef Awards 2023, this 12-seat underground spot showcases Dutch produce, with a menu adapting to the seasons. The autumn selection will channel the forest, spotlighting dishes like rabbit, duck, deer and mushrooms. Come winter, the emphasis shifts to the sea, utilising prawn, lobster, smoked eel and crab. Spring pivots towards lamb, and summer unfolds a spread of vegetables, fruits and even insects.

For van der Kroft, the flavour is at the heart of every dish. His commitment is to surprise diners, believing that this element is essential for a transformative meal. At Tres, the focus isn’t solely on technique but deeply rooted in maximising flavour.

Tres Is More and Alejandro Serrano

Through Tres Is More, the restaurant seeks to elevate its culinary offerings. The concept is to foster an exchange of knowledge and culture, all while championing Rotterdam’s gastronomy.

Alejandro Serrano is slated as the series’ first guest. His namesake restaurant lies an hour’s journey from Bilbao in Miranda de Ebro. Serrano’s cuisine pays tribute to the Castile region, harnessing the finest local ingredients. He also collaborates with local artisans, ensuring that every aspect of the dining experience, from the music to the tableware and artworks, is immersive. After honing his skills in revered restaurants such as Azurmendi and DiverXO, Serrano embarked on his venture in 2019. His dishes, which celebrate the landscapes and produce of Castilla y León, garnered him a Michelin Star by 2021. Additionally, he’s been spotlighted in Spain’s Repsol guide and features on Forbes Magazine’s 30 under 30 list.
