Half Cut Market launches Aidan & Friends chef series, bringing European culinary talent to Kentish Town

North London restaurant and wine bar Half Cut Market has announced a new guest chef collaboration series titled Aidan & Friends, running across June, July and August 2025. The programme, curated by head chef Aidan Richardson, will see Richardson teaming up with four chefs from London, Amsterdam, and Edinburgh for a series of two-night collaborative dinners at the venue’s York Way location. 

The series will begin on Friday, 27th and Saturday, 28th June with Frankie Clarke, currently a chef at Camille in Borough Market, London. Subsequent collaborations will feature Adam Viguier Juarez of Bottleshop in Amsterdam (11th and 12th July), Ciaran Patrick of Bodega, also in Amsterdam (25th and 26th July), and Moray Lamb of Montrose in Edinburgh (8th and 9th August). Each chef has previously worked with Richardson during his career, which has included positions at BRAT in London, Embla in Melbourne, and Café de Parel in Amsterdam.

Each dinner will feature a menu developed jointly by Richardson and his guest chef, including a reinterpretation of Richardson’s signature flatbread and his well-known eclair dessert. The dishes will also be paired with specially designed cocktails, created in collaboration with East London Liquor Company and priced at £10 each.

The opening event with Frankie Clarke will showcase recipes influenced by Clarke’s British and Jamaican heritage, including Pineapple and Chilli Gilda, Lindisfarne Oyster with Tomato and Scotch Bonnet, Beef Tartare with Plantain and Onion, Grilled Potato Flatbread with Walnut and Pimento Sauce, Red Mullet Escovitch, Jerk Chicken with Green Goddess, Rice and Peas with Crab Custard, and a Coconut and Rum Caramel eclair.

Half Cut Market was founded in 2021 near Caledonian Road and Kentish Town stations by Danny, Holly, Edwin and Paul. Richardson, originally from Cambridgeshire, became head chef at Half Cut Market in 2024 following stints at several acclaimed restaurants. His approach combines international influences and seasonal ingredients, a style reflected in the upcoming series. 

Menus for each collaboration will be released on Half Cut Market’s social media channels one week before each event, with bookings available via the restaurant’s website or through the TOCK platform.
