East London bar The Sun Tavern has launched a new summer cocktail menu featuring four original drinks, available from this week at its Bethnal Green Road location. Proud of its extensive Irish whiskey and Poitín collections, the venue has introduced the seasonal offerings to reflect warmer weather and evolving consumer tastes.

The new additions include a variety of ingredients ranging from clarified apricot yoghurt to tropical fruit blends, with the aim of creating cocktails that offer a mix of refreshing, bold and shareable options. Among them is the Joyride, which combines Woven’s Homemade whisky with pistachio, matcha, curry leaf, citrus and soda. Also new on the menu, Pressure Drop features Elements of Islay’s Cask Edit whisky and Quiquiriqui mezcal with chai and clarified apricot yoghurt, offering a smokier profile. For those seeking fruit-forward flavours, Wobbles on Cobbles includes Few Rye whiskey, Skipper tropical rum, amontillado, Cointreau, passionfruit, pineapple and soda. A larger-format drink, Britpop, is designed for sharing and serves four people. It contains Bombay Sapphire gin, elderflower, cucumber, strawberry aperitif and sparkling wine. The bar also continues to serve its established house classics, such as the Umbrella Vespa (a chilled cocktail served at -20°C and made with Grey Goose vodka, Boatyard gin, Kina L’Aero white wine and Vichy Catalan sparkling water) and the iced Belfast Coffee, which includes Bán Poitín, cold brew coffee, cream, demerara sugar and nutmeg.

Founded in 1851 and renovated in 2014, The Sun Tavern has become a fixture in East London’s bar scene. It claims to offer nearly 300 whiskies and what it describes as the world’s largest collection of Poitín, with selections from distilleries such as Midleton, Redbreast, Spot Whiskies and Bushmills.
