Mambow’s Abby Lee to host Nyonya feast at The Dusty Knuckle bakery in Dalston

Abby Lee, head chef and founder of the modern Malaysian restaurant Mambow in Clapton, will cook a one-night menu of home-style Nyonya dishes at The Dusty Knuckle bakery in Dalston on Thursday 8^th October in a collaboration between the two east London star players.

The Dusty Knuckle, celebrated in the area for its popular sourdough and sandwiches, invites Lee as part of a recurring series of collaborative Dusty Dinners, in which guest chefs take over the bakery for an evening. 

One-night resident Mambow began as a supper club and street food operation before Lee opened a permanent site in Clapton, where the kitchen focuses on Malaysian cooking with an emphasis on Chinese-Malay dishes. The chef explains the menu draws on the food she grew up around: Nyonya cooking, also known as Peranakan cuisine, which developed among the descendants of Chinese migrants who settled in the Malay peninsula, and combines the ingredients and techniques of their homeland with the spices and aromatics of the Southeast Asian locale. 

The special set menu at The Dusty Knuckle opens with an Assam Pedas Oxtail Curry Puff, created specifically for the event and made using house dough. It is followed by Udang Masak Lemak, a Nyonya prawn, pineapple and coconut curry. The there’s Babi Chin (braised pork belly cooked with fermented soybean and soy caramel), Okra Sambal Belacan with Torch Ginger Flower and Turmeric Rice with Dark Roasted Coconut. Dessert is Kuih Dadar, a sweet coconut pancake served with kopi ice cream.

The meal will be served at the bakery itself, instead of in a conventional dining room, with guests seated informally inside the Dalston workspace. Ticketed in advance at £65.71, service will run across two sittings, at 6pm and 8.30pm, at the venue on Abbot Street. The menu is presented as a single set feast rather than à la carte, so the price covers all courses listed.
