Original recipe of the week: Thai style BBQ prawns

What’s better this weekend than a BBQ? With the hottest day of the year on the cards you’re sure to be in the mood.

BBQ seafood is all the rage this year too: think tapas or Moroccan style cuisine…The hot sun beaming down, sipping an ice-cold beverage and tucking into a delicious plate of hot BBQ seafood.

Fresh and light, there’ll be plenty of room for a glass of wine (or beer) in the sun too. Enjoy!

Thai style BBQ prawns

Serves: 4

Prep time/cook time: 10-15 minutes

What you will need:

1 handful of freshly chopped coriander
1 handful of freshly chopped mint
1 small red chilli, chopped
1 tsp fish sauce
½ lemon juice
1 tbsp soy sauce
3 tbsp vegetable oil
1 pinch black pepper
1 pinch salt
250g fresh raw prawns
Kebab skewers

What you need to do:

1. Simply combine all of the above ingredients in a bowl.

2. Add the prawns to this mix and leave to marinate for 2-3 hours.

3. While they are marinating, fire up the BBQ and when nice and hot you’re ready to start.

4. All you need to do now is thread onto kebab skewers – perhaps five or six at a time and BBQ on each side for three or four minutes. Serve with a light salad to be nice and healthy.
