Original recipe of the week: Lemon and rose fool

If you are like us and you love a bit of something sweet after a big savoury meal, but don’t want to pile on the pounds, you’ll love this recipe. Inspired by the new Bircher muesli yoghurt mixes that are all the rage at the moment, this recipe will really give you that sweet kick. You can tone down the sugar if you like, or if you prefer your dessert to taste fruitier, then simply add a handful of fresh berries opposed to dried fruit for an extra fresh zing.

Lemon and rose fool

Serves: 2

Prep time: 5-10 minutes

What you will need:

250ml low fat Greek yoghurt
1 tsp lemon juice
1 tsp vanilla extract
80g Turkish delight – chopped
50g dried cranberries
100g rolled oats
50g hazelnuts – chopped
2 tbsp maple syrup

What you need to do:

  1. In a mixing bowl, mix together the yoghurt, lemon, vanilla and maple syrup.
  2. Now add in the oats, nuts and cranberries, and mix again.
  3. Lastly, begin to layer the oats mix into a serving glass with 1 tbsp of the yoghurt mix and a sprinkle of Turkish delight on top. Continue to layer the two mixes until everything is used up, then enjoy.
