London-based artisanal bakery Pophams is collaborating with matcha specialists Jenki to launch a limited-edition pastry, available from 23rd February to 1st March. The new treat, described as an edible matcha cup filled with matcha, coconut sponge and mandarin jam, will be sold exclusively at Pophams’ three locations in London Fields, Islington and Victoria Park. The collaboration aims to merge the expertise of both brands in viennoiserie and Japanese tea, following a previous joint creation that reportedly sold out last year.

The pastry, priced at £7, features Pophams’ signature techniques alongside Jenki’s ceremonial-grade matcha, which is shade-grown and milled in small batches in Japan. It is topped with green matcha cream, finished with a coconut swirl reminiscent of latte art and dusted with matcha. Inside, a centre of mandarin jelly is revealed. 

Pophams’ founder, Ollie Gold commented on the renewed partnership: “This marks our second time uniting with Jenki, which feels particularly special. Their matcha reflects the same care and precision we value in our baking, so revisiting it through pastry felt like a natural progression. We’re big believers in letting the ingredient shine and Jenki’s matcha has the depth and character to lead a creation on its own. Having served it in our bakeries for years, this reunion builds on an existing relationship and gives us the chance to celebrate a product we genuinely admire.”

Founded in 2017, Pophams operates three bakery sites in north and east London, offering a range of hand-crafted viennoiserie pastries. Jenki, established in 2020, runs four matcha-focused bars in the city and sources its matcha from a family-run tea farm in Uji, Japan. The limited-edition pastry will be available for one week only.
