Kitchen Table launches Stages of Nature cocktail and canapé series celebrating British micro-seasons

On 7th October, two Michelin-starred restaurant Kitchen Table will launch a new weekly cocktail and canapé series titled Stages of Nature. Hosted in the restaurant’s lounge in Fitzrovia, the 90-minute experience will be led by bar manager Amine Azil and will cater to a maximum of ten guests per session. The event will pair four cocktails with four canapés created by chef-founder James Knappett, with each combination designed to reflect the restaurant’s focus on seasonal British ingredients and sustainability.

The series will examine the evolution of cocktail-making by presenting four classic drinks – Punch, Highball, Martini and Old Fashioned – reimagined using locally sourced, seasonal produce. The cocktails will also incorporate ingredient offcuts and leftovers to reduce waste, aligning with Kitchen Table’s environmentally conscious ethos. The menu will change throughout the year in response to the local micro-seasons.

The inaugural October menu includes a Grape Punch made with grape brandy, Pinot Gris, verjuice and grape caramel, a Foraged Gin and Tonic featuring Heritage Old Tom gin, seasonal foraged tonic water and gooseberry, a Foraged Dry Martini composed of gin and seasonal foraged dry vermouth, and an Old Fashioned with English rye whisky, Bramley apple, roasted oats, caramel and custard. Each will be matched with a bite such as Jerusalem Artichoke Chips with Rosemary Mascarpone or Rich Chocolate Fudge with Fennel Seed.

According to the organisers, the aim is to present guests with the history and craft of mixology in an intimate setting, while highlighting the potential of British ingredients. The experience is priced at £95 per person and will be available to book weekly.
