Mauro Colagreco’s three-Michelin-star restaurant, Mirazur, located in Menton on the French Riviera, will mark its 20th anniversary this April with a unique menu curated by renowned Spanish chef Ferran Adrià. The anniversary occasion, taking place from 1st April to 3rd May, will see Adrià act as gastronomic curator, crafting a retrospective culinary experience that highlights two decades of the restaurant’s evolution.

Mirazur, which opened in 2006 and was named the World’s Best Restaurant in 2019 by The World’s 50 Best Restaurants, is internationally recognised for its focus on environmental sustainability and its use of produce from its own permaculture gardens. To celebrate this milestone, Colagreco has invited Adrià – known for his work at the legendary elBulli restaurant and for pioneering techno-emotional cuisine – to curate a menu that reflects venue’s development.

This is the first time Mirazur has introduced the role of a gastronomic curator, with the aim of offering an analytical reading of the restaurant’s culinary history. The collaboration seeks to examine and showcase the evolution of recipes, techniques and signature dishes, as well as the influences that have shaped Mirazur’s identity over the past 20 years. The menu will also pay homage to the heritage of French haute cuisine, referencing figures such as Auguste Escoffier and Antonin Carême, and the innovations of nouvelle cuisine.

Adrià, who has dedicated recent years to research and education through the elBullifoundation, is approaching the project as an exploration of Mirazur’s development. The team explains he will be “understanding what has been done, identifying key milestones, recognising its evolution, pinpointing defining transformations, questioning what already exists… all essential explorations in staging a 20-year trajectory within a single menu!”.

The special menu will be available for €530 per person, with optional wine pairings ranging from €350 to €950. Three options are offered: a selection of prestigious wines reflecting key moments in Mirazur’s history, a set of 2006 vintages marking the restaurant’s opening year or a collection of grands crus and older vintages.

Guests are invited to support the elBullifoundation through donations, with proceeds going towards fostering the next generation of chefs. The host kitchen will execute the menu daily throughout April, though Adrià will only be present on select occasions.

Mirazur has distinguished itself as the first restaurant to achieve both B Corp and Plastic Free certifications, underscoring Colagreco’s commitment to environmental responsibility. In 2022, the chef was appointed UNESCO Goodwill Ambassador for Biodiversity, further reflecting his advocacy for sustainable gastronomy.
