Copenhagen will become the focal point of the international culinary scene from 29th January to 2nd February 2026, as Alchemist, one of Denmark’s most renowned restaurants, hosts a five-day event titled Convergence. The gathering will bring together over 60 chefs from the world’s leading restaurants, all of whom are ranked on the Top 100 list curated by The World’s 50 Best Restaurants. The event aims to foster collaboration and cultural exchange within the global gastronomic community.

The event, initiated by Alchemist’s founder and head chef Rasmus Munk, will include participants from 26 countries across six continents. Chefs from established culinary centres such as New York, London, Barcelona, Bangkok and Tokyo will be joined by representatives from Lima, Cape Town, Mumbai, Quito and Queenstown. Representing the British capital will be Kol, Mountain and The Clove Club, as well as The Connaught Bar. The intention, state the organisers, is to create an inclusive platform for sharing culinary knowledge and creativity at a time when, globally, dialogue is often under strain.

“I see such creativity, knowledge and resilience among my colleagues in the culinary world, and to be able to share it with the guests at Alchemist and a wider audience in Copenhagen is a dream come true. I hope the event will resonate and have a meaningful impact both here in Denmark and throughout the world,” said Rasmus Munk.

Each evening during the event, more than a dozen guest restaurants and bars will present their signature dishes and cocktails, alongside creations from Alchemist itself. The aim is to offer attendees a diverse range of flavours, techniques, and culinary philosophies from around the world, all within Alchemist’s immersive setting.

In addition to the dinners, Convergence will feature a symposium programme including talks, discussions and activities designed to connect leading figures in gastronomy with the wider public. The programme will involve not only chefs and restaurateurs, but also culinary students, school children and their teachers, food producers, artisans and the general public.

The ambition behind Convergence is to make the expertise and community of top-level gastronomy more accessible, using Copenhagen’s reputation as a culinary hub to encourage collaboration and cultural exchange. “We are planning for this to be a yearly event, supercharging us with knowledge and inspiration, and using Alchemist as a beacon for dialogue, collaboration, and cultural exchange across gastronomy, art and society,” added Munk.
