A new Italian focacceria, Fulvio’s, is opening in Soho this November, serving hand-filled focaccia, breakfast and Italian coffee. And even better, on opening day the team will give away 100 free sandwiches from 11am on a first come, first served basis, and everything else will be sold at 50% throughout the day.

The shop comes from the team behind the acclaimed Fatto a Mano pizzeria in Brighton and is named after Fulvio, a member of the team whose focaccia recipe, developed in the group’s kitchen, forms the basis of the menu. The dough uses just flour, extra virgin olive oil, yeast, water and salt, and is made using a traditional two-stage biga method and proved for at least 24 hours, which the team says produces a lighter, more flavourful bread that is easier to digest.

“Ci vuole tempo,” says Fulvio. “It takes time. People think the secret is in the filling. But the secret is in the dough. 24 hours. Then the focaccia is eaten the day it’s made. Nothing clever.”

Trays will be baked on site throughout the day, and each focaccia will be cut and filled to order at the counter. The opening menu lists eight to ten signature fillings, including vegetarian and vegan options, alongside rotating specials and a build-your-own option. Combinations include mortadella with aged Parmesan, artichoke cream and wild rocket, and Prosciutto di Parma with mozzarella, sun-blushed pomodorino tomatoes and rocket. A Caprese-style focaccia pairs beef tomatoes with Campanian mozzarella and basil pesto, while a vegan Sicilian-style option features grilled peppers, marinated courgettes, rocket and Sicilian pesto. Tiramisu will be available for dessert, and the shop will also stock soft drinks, juices and a small range of Italian retail products.

The small site on Great Chapel Street has been fitted out with Carrara marble, stainless steel, reclaimed timber and handmade Italian tiles in dark green, off-white and red, a design intended to resemble a neighbourhood bakery on an Italian side street.

Fulvio’s will open at 8am on weekdays and 9am at weekends, closing at 5pm daily. Mornings will focus on pastries, filled croissants and coffee made with a dark-roasted Italian blend from London roaster Kofee, with focaccia served from 11am until closing. The shop has one house rule, “no cappuccino after midday”, which will be printed on its coffee cups. A Bell of Shame will ring whenever a customer orders one in the afternoon – although cappuccinos will still be served!

Rupert Davidson, co-founder of Fulvio’s and Fatto a Mano, said: “We’d been eating Fulvio’s focaccia for years before we realised everyone else wanted it too. It does one thing properly: bread baked here, today, and filled in front of you. If people walk past in a year’s time and feel like it’s always been there, we’ve done our job.”
